I'm a cookie eater, every now and then I will a huge craving to munch on some some cookies. That is just what happened today. I went to my kitchen for some nibbles and someone had left me crumbs to lick. So today became a cookie baking day. Baking cookies are the easiest things to do besides making muffins.

Prepare this Pine Nut Cookie recipe is not hard. The ingrediants are very common to find, and yes you do put fennel seeds into the cookie. Do take faith and include it as it adds a very nice subtle taste.

When preparing the dough, take note that it will be quite soft so before you shape the dough into an 8-inch-long log, you may need to put in the fridge for a few minutes so it gets hard, then it becomes easy to shape the dough.

These cookies have a very nice flavour. Make sure you don’t under bake it because these cookies taste nicer when it is crispy. Adding the ground fennel seed to the cookie makes the flavour quite interesting. The only thing I don’t understand is why is it call pine nut cookies? What if I decorate atop the cookies with cashew nut would it be then call cashew nut cookies?? :-)

Instructions  
Using an electric mixer, beat the butter, sugar, vanilla, fennel seed, and salt in a large bowl until light and fluffy.
 
 
Beat in the egg.
Add the flour and mix just until blended.
 
Transfer the dough to a sheet of plastic wrap.
Shape the dough into an 8-inch-long log.
Wrap the dough in plastic and refrigerate for 2 hours.
Preheat the oven to 350 degrees F. Line heavy large baking sheets with a silpat or parchment paper.
Cut the dough log crosswise into 1/8 to 1/4-inch thick slices.Transfer the cookies to the prepared baking sheets, spacing evenly apart.
Press the pine nuts decoratively atop the cookies.
Bake until the cookies are golden around the edges, about 15 minutes.

Recipe

- 1 stick (1/2 cup) unsalted butter, at room temperature
- 1/2 cup plus
- 2 tablespoons sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground fennel seed
- 1/4 teaspoon salt
- 1 large egg
- 1 1/4 cups all-purpose flour
- 1/4 cup pine nuts

MAKES : 2 - 3 Dozen depending on the size of the cookies.
